Air-fryer Corn Ribs

Air-fryer Corn Ribs

SERVES: 4-6 (makes 16 corn ribs)

PREP: 10 mins

COOK: 15 mins

EQUIPMENT: Air-fryer, sharp knife 

INGREDIENTS:

3 fresh corns 

 

MARINADE 

2 tbsp (40ml) extra virgin olive oil 

2 tsp (6g) garlic powder 

1 tsp (3g) mild paprika powder 

Pinch of sea salt and pepper 

METHOD:

  1. Remove greens from the fresh corn. 

  2. Fill a large pot with water and bring to the boil. Add corn and boil for approx. 5 mins. Run under cold water to cool. 

  3. Lay corn flat onto a cutting board and trim the ends. Stand corn upright and split lengthwise with a sharp knife. Cut halves into quarter lengths or smaller ribs as desired. 

  4. To make the marinade, add olive oil, paprika, garlic powder, salt and pepper to a small bowl and stir to combine. 

  5. Brush or rub ribs with the marinade and arrange in a single layer in the air-fryer basket. Air-fry at 200°C for 15-20 mins or until tender and crispy. 

Mandy’s serving suggestion: 

Serve air-fryer corn ribs with aioli or dip of choice. 

 

STORING LEFTOVERS: Store in an airtight container in the fridge for up to 3-4 days or freeze for up to 4 months. 

TIPS:

  • Prep tips: 
    If you don’t own an air-fryer, simply preheat oven to 200°C and bake ribs for 20 mins or until golden brown. 

  • Easy ingredient swaps: 
    Swap paprika powder for spices of choice. 

  • Additional boosters: 
    Boost with finely grated parmesan cheese. 

  • Baby-friendly version: 

Leave out salt and serve mashed or in finger food-sized pieces.
