Cheesy Chicken Pizza

Welcome to our cheesy chicken base pizza recipe, designed especially for kids who love delicious and fun meals! EQUIPMENT: High-speed food processor

INGREDIENTS:
500g chicken mince 
2 cups (240g) grated mozzarella cheese 
1 egg 
1 tsp (2g) dried oregano 
Pinch of pepper 

Toppings: 
1 cup (250g) tomato passata 
1 cup (120g) grated cheese 
5 cherry tomatoes, rinsed and sliced 

METHOD:

  1. Preheat the oven to 180°C and line a baking tray with baking paper.  

  2. Combine the chicken, mozzarella, egg and oregano in a mixing bowl and roll into approx. 12 balls.  

  3. Flatten each ball on the lined tray to form a circle.  

  4. Bake for 12-15 mins, swapping the trays around halfway through cooking. Remove from the oven.  

  5. Top with tomato passata, cheese and tomato slices and return to the oven for 5-8 mins until the cheese has melted. 

MANDY’S SERVING SUGGESTION: 
Serve chicken pizzas with a salad or steamed vegetables on the side. 
 
STORING LEFTOVERS: Store in an airtight container in the fridge for up to 3-4 days or freeze for up to 4 months.

    Pre-bake the bases and store in the freezer for a quick meal. 

  • Allergies: 
    For a dairy-free version: Swap mozzarella and grated cheese with a good quality vegan cheese. 

    For an egg-free version: Swap egg for a store-bought egg replacer.

    Top the pizza with toppings of choice such as olives, mushrooms, capsicum etc. 

  • Additional boosters: 
    Hide some vegetables like carrot and zucchini in the tomato sauce.
